Cauliflower mashed potatoes

I tried to make "mashed potatoes" out of cauliflower tonight. Um, let's just say it didn't work out. The recipe said that I was supposed to just use the florets - but it turns out that I mis-read (i.e. didn't read) that part, so I used the stalk-part, too. Um, the texture was gross. The taste? Well, it was good.

Good thing I sort of knew I'd mess it up. (I bought TWO heads of cauliflower at the grocery store today.)

That Craig, he's one lucky man... I mean, two nights in a row of mashed cauliflower?!

Who says he ain't livin' like a king?

P.S. Anyone have a good lentil soup recipe?

  2. These have always sounded good, but I've not yet been brave enough to try them. If you found a good recipe, I'd love to see it!
    And when they say florets, does that mean absolutely no stalks (not even the tiny ones at the top)? Where does one draw the line between stalk and floret??

  3. I LOVE cauliflower mashed potatoes!

    Yes, cutting the stalk part off is good, I made that mistake the first time I made them. I cook the florets in chicken stalk for more flavor then sprinkle parmesian cheese and a little butter. Not going to lie, they don't really taste like mashed potatoes but they are delicious!

  5. Oooh, you know what else is good? Roasted cauliflower: cut it up into florets, drizzle olive oil, sprinkle w/ salt & pepper and put in the oven on 375 for like 25 minutes (check often though - it was a little brown the first time we did it). You can include the stalks. :)

  6. I have added cauliflower to potatoes and mashed them. It's good and hidden. Great for kids, especially if they like mashed potatoes.
