  2. I love meatloaf. And the best part of it, to me, is the out part that gets a little crispy.

    Now, this particular recipe doesn't look all that good. I'll take my mom's any day...but I do think the idea is a good one.

    Basically, it's just individual serving sized meatloaves.

    Do they have to called "muffins" just because they were cooked in a muffin pan? Nah. How 'bout just mini meatloaves?

  3. Sarah - I'm with you. I LOVE meatloaf. I'm not above it at all. :)

    Craig and I agreed that if they were loaf-shaped mini meatloaves, we could handle that better than "cupcake" shaped mini meatloaves.

  4. I've seen mini-loaf pans in the past, maybe pampered chef? In their stone stuff? Can't remember. But it seemed pretty great. I'd like to find those again.

  5. I agree, a mini-meatloaf shape is FAR better then this muffin shape they speak of. The crispy part is the best!

  6. I have to admit that I've made mini meatloaves in a muffin pan before. They were about single-serving size and easy to freeze and then eat later.
